A blend of 70% Chardonnay and 30% Sauvignon Blanc. The chardonnay was allowed to partially ferment with wild yeasts, before blending with our Sauvignon Blanc. This wine shows fresh varietal fruit characters of both grape types, with lemon and peach dominating the nose. Its palate is full and rounded with an extended finish and soft mouthfeel. This handcrafted wine will develop further complexity with boittle age.
