Wine Methods

 

 Creating fine wine is evidenced by the daily tending and non-commercial hand crafting of our vines and time-honoured wine making methods, such as open vat fermenters, hand plunging and barrel fermentation, all grapes are individualy picked and inspected. As traditional handmade winemaking methods are far gentler than the modern techniques often utilised by large commercial operations; The Murrumbateman Winery is at a distinct advantage as a boutique establishment. The process is soft; yielding to the demands of the fruit so that the maturation of the skins and the extraction of the tannins from the fruit are maximised - ideal for the wines made in cool climate regions.

Minimal intervention is the critical element in growing and developing our vines; it is not without daily and sometimes hourly fruit inspections, taste and colour tests throughout the season plus intensive hand picking that the quality of our wines will be ensured. The wines are handmade in small batches to ensure consistency and quality in every bottle.  Such meticulous techniques have earned the entire region widespread acclaim for producing consistent, quality premium wines.

The winemaker has worked with a very skilled geologist to bring modern scientific methods of viticulture to work alongside traditional hand crafted methods. The following techniques have been sampled and implemented to bring you the best wine in the region. Aggressively sampling IPM procedures, Partial root zone drying and regulated deficit irrigation, Trellising systems and canopy management, Micro-oxygenation through traditional barrels, tests on a trio of wild-native-cultured yeasts, Brettanomyces, reverse osmosis, Sulphur dioxide management.
